Here
comes the milk! This big tanker truck holds enough milk to fill up a
swimming pool. It brings the milk from the farm to the processing plant.
The milk is pumped from the truck into refrigerated holding tanks.
The first step in milk processing is to
separate the cream out of the milk. Did you know that raw milk has about
3.3% butterfat? That is what cream is. In the cream separator, there are
paddles which slowly agitate ( jiggle) the milk. That makes the cream rise
to the top. The cream is put into its own tank.
Next
the cream and the milk are mixed back together in a mixing tank. Why is
the cream separated from the milk and then mixed back together again? Well
that’s so the butterfat in the milk can be measured exactly. That’s
how we get non-fat milk, lowfat-1% milk, reduced fat - 2% milk and whole
milk.
