"SHAKING UP THE MILK"

Here we are at the processing plant, looking at this maze of pipes! After the milk is pasteurized ( heated up to get rid of bacteria), it gets homogenized. Wow! Such big words!

The milk is pumped through a machine that makes the cream part ( or butterfat) stay with the milk part. That way the cream stays mixed with the milk instead of rising to the top and you don't have to shake it up before drinking it. ( Of course milk shakes are great in the summer. If you go to the Kids' Corner on the Web, you will see some easy recipes for Smoothies and you can shake up the milk to make them!)

With 6,000 gallons of milk running through all of those pipes every day, it is very important to keep the entire plant clean. Once a day all of the mixing tanks, pipes, machines, floors and walls are scrubbed or flushed out or steam cleaned.
